Peanut Butter Blondies

Ingredients:

1 Cup Oats

1/2 tsp Baking Soda

1 tsp Salt

3/4 Cup Peanut Butter (or Nut Butter of choice)

1/2 cup Date Syrup (Maple Syrup or Brown Sugar also work)

1/2 cup Coconut Sugar (Stevia or White Sugar also work)

2 TBSP Flax Meal + 2 TBSP Water (1 Egg also works if non-vegan)

1/4 cup Non-Dairy Milk (i.e. Oat milk, Almond milk, Soy milk)

2 tsp Vanilla Extract

1 Cup Dark Chocolate chips

Method:

Place oats in a food processor or blender and pulse until fine. Combine oats with baking soda and salt.

Mix peanut butter, date syrup, coconut sugar, flax egg, milk, and vanilla until smooth. Combine oats with wet ingredients until incorporated.

Lastly, add chocolate chips (and/or nuts of choice i.e. walnuts) and place in a greased 8 x 11 baking dish.

Bake at 350 F for 20 minutes for gooey blondies. Cool for 10 minutes, slice, and enjoy!
