Apple Carrot Spice Muffins

Ingredients:

1 ripe banana

1 carrot (grated)

1 apple or 1/2 cup apple sauce

6-8 dates (soaked in water)

2 tsp fresh grated ginger

1/4 cup agave syrup or maple syrup

1/2 cup olive oil

1/4 cup sunflower or coconut oil

3 tsp flax meal + 6 tsp water

1/2 cup almonds or almond meal

1 cup oats

1/2 cup gluten free flour blend or rice flour

1.5 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp pumpkin pie spice blend (Cinnamon nutmeg, clove)

1/4 tsp cardamom

Directions:

Process banana, dates, apple, oil, agave and ginger until smooth. Fold in carrots and flax egg and set aside.

Process oats and almonds until fine and pour into a separate bowl. Mix in gluten free flour blend, baking soda, salt, and spices.

Fold dry ingredients into wet ingredients.

Spread batter across 12 greased muffin tins.
Bake for 18 minutes at 375 F or until toothpick inserted comes out clean.
