Vegan Blueberry Muffins

INGREDIENTS

  • 1 cup flour (all-purpose, spelt or white whole wheat/gluten free blend)
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup raw sugar
  • 1 cup oat milk
  • 1/3 cup olive oil
  • 1 tsp flax seed + 2 tsp water
  • 1 teaspoon vanilla extract
  • 2 tsp lemon zest
  • 1 cup blueberries (fresh or frozen)

Directions:

Combine flour, baking powder, salt.

Stir in sugar, milk, oil, lemon zest, vanilla, flax.

Fold in the blueberries.

Pour batter into 6 greased muffin tins and bake at 375 F for 15 min or until toothpick inserted comes out clean.
