Pear & Ginger Energy Balls
Simple, naturally sweet, nutty and packed full of fibers!
Ingredients:
4 Prunes
6 Dates
1 or 2 Dried Pears
1/2 cup Raw Cashews
1/2 cup Walnuts
1/3 cup Oats
2 tsp Fresh Ginger
2 tsp Cinnamon or Pumpkin Pie Spices
1 TBSP Almond Butter (or cashew butter)
1-2 tsp Water (as needed)
Combine all ingredients in a food processor or pulse in blender until a dough forms.
Roll dough into balls 1-2 inches in diameter and place in the fridge for at least 30 minutes to set.
Note: You may experiment with different dried fruits/nuts and even substitute part of the oats for protein powder.
